Would be curious to get your opinion on insects as an alternative protein source. Insects have a low carbon footprint, with estimates as low as 1/2000th of that of beef. There is also huge amounts of venture capital (~$250m so far in 2020 alone) being ploughed into insect farms. I wrote more about the case for insects in the latest piece for my newsletter (link below), but would value your thoughts on the issue!
